A yummy way to use up those zucchini that are going to overflow your garden! Suitable for all phases of Atkins, even the Fat Fast. About 200 calories per 1/2 cup serving, 80% of them from fat.
4 cups sliced zucchini
2 large eggs
1 cup real mayonnaise
1 cup chopped onion
1/4 cup chopped green pepper
1 cup Parmesan cheese (powdery kind in the can)
dash ground pepper, if desired
How To Prepare:
Grease a large (1.5 quart) casserole dish. Preheat oven to 350 degrees.
Bring a large pan of unsalted water to a boil. Add zucchini. When water returns to boil, turn the heat down to simmer and cook the zucchini till tender. DRAIN WELL!!
In a large bowl, beat the eggs. Add remaining ingredients and mix well. Add the drained zucchini and mix again. Pour into greased casserole dish and bake at 350 for 30 minutes, or until the top is lightly browned.
