kind of like an ice cream though not exactly since there is no cream in it so its not too creamy -- its still a great frozen treat though!
32 oz soy slender or LC milk
4-5 tbs of not starch (expert foods) or other thickening agents like xanthan gum (just xanthan could be a little gummy though so you might want to think about polydextrose or something that mimics the texture of sugar) -- enough to make it like a thick pudding after blended
Sweetner to taste (seems to lose sweet intensity after it becomes ice cream so make it a little sweeter before putting it in the ice cream maker)
How To Prepare:
blend all ingredients (i use a hand blender) until thick. For best results, refrigerate for a day or two so the gums really work into the liquid and make it thick and the whole thing is nice and chilled. Then put it in the ice cream maker per manufacturer's instructions (i put it in for about 1/2 an hour). Serve!
nb. you can store it in the freezer but it will go solid and you will need to let it thaw out a bit before you can eat it! still good though!
