Ingredients: 1 lb. Ground turkey breast (lean)
2 Onions, finely chopped
5 Garlic cloves, minced
½ tsp. E.V.O.O. (Extra Virgin Olive Oil)
2 Tbsp. Red wine
2 Green bell peppers, seeded and
finely chopped
3 ½ C. Diced tomatoes with green
jalapeño chilies (canned)
2 C. Chicken broth (low-sodium,
2 tsp. Salt or to taste
2 tsp. Chili powder or to taste
1 tsp. Black pepper or to taste
1 tsp. Ground Cumin
¼ tsp. Cayenne pepper or to taste
8 oz. Black beans
8 oz. Red Kidney beans
How To Prepare: 1. Soak beans overnight. Drain & rinse.
2. Cook and crumble turkey, adding ½ tsp. each of salt, pepper and chili powder. Cover and set aside.
3. Sauté onions and garlic in olive oil and red wine.
4. Add onion/garlic mixture and all above ingredients to your Crock Pot®.
5. Mix thoroughly.
6. Cover and cook on LOW for 6-8 hours.
