Description:
Ingredients: 1 pkg Italian Sausage (either sweet or hot)
2 green peppers
2 yellow peppers
1/2 vidalia onion
How To Prepare: Put just enough water to cover the bottom of a large pot. Slice up sausage into 2-3 inch pieces and put into pot. Cook on medium-high for about an hour uncovered.


Slice peppers into thick pieces. Cut onion up into rings. Add to cooked sausage with about 2 cups water. Cover and let stew for about a half hour, or until the peppers are soggy.


Serve and enjoy!

Pros: Quick, easy, yummy
Cons: None

This is a staple in our house. We always use the hot sausage. The only difference is that I fry the onions and peppers so that they are slightly crunchy instead of cooking in water. Cuts done on cooking time too.
