Description:
Ingredients: Zucchini Nut Bread
This tasty, tender, and easy low carb quick bread also makes great muffins. Simply bake off the batter in a 12-cup muffin tin for 35 to 40 minutes.


1 cup (scant ) Atkins Bake Mix
1 cup (scant) finely ground almonds
1 1/2 cups granular sugar substitute
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup canola oil
4 eggs
1 medium zucchini, coarsely grated
1 teaspoon vanilla extract






I use 4x the spice and 1/2 and 1/2 of carbolite bake mix and atkins bake mix
How To Prepare: Zucchini Nut Bread

1. Heat oven to 350º F. Grease an 8x 4 loaf pan; set aside. In a large bowl whisk together Bake Mix, ground almonds, sugar substitute, cinnamon, salt, baking soda, and baking powder. In a medium bowl, mix vegetable oil, eggs, zucchini, and vanilla extract.
2. Pour zucchini mixture into bake mix mixture. Mix well. Pour batter into prepared pan. Bake 1 hour until golden brown, and a cake tester inserted in center comes out clean. Cool on wire rack before cutting into thin slices.

Carbs per serving - include all nutritional information if known: net carbs 3.5 wth nuts and all atkins mix : calories 167: 2.5 grams protein

Positive aspects of the product (pros): Almost as good as the "real thing".
Cons: none

This is the first 10 I have given because this was really good. I made two slight changes to the recipe as written. I used Carbquik instead of Atkins mix and I added a cup of chopped walnuts that are not called for in the recipe.

Cons: None

This is a great moist muffin/bread w/o the carbs like carrot or pumpkin. I used Carbquik for Atkins and 1/2 cup almond and 1/2 cup flax, 4 tsps cinnamon and 1 tsp baking powder. Mixed poly D, erythritol and Davinci syrup for less carbs and baked in 7 mini loaf pans (for only 4 carbs each loaf). I ate one right out of the oven - fabulous. Thumbs Up!
