Ingredients:
|
2 1/2 cups flour (almond)
1 1/2 cups splenda
1 teas. xanthan gum
1 cup butter, softened
1 egg
1 1/2 teas baking powder
1 teas vanilla
1/4 teas. salt

How To Prepare:
|
Mix all ingredients in a mixer until well blended.(I divide this into 3 or 4 ziplocks, so as not to overeat. Refrigerate for at least 4 hours before baking.
(I use one bag at a time and flavor according to taste.), (such as chopped nuts),( or 1 square of melted chocolate, plus little more splenda,) or ( l teas. lemon extract and 1 teas. orange extract combination makes a good tast.)
Make cookies by forming dough into balls, placing on a cookie sheet. Flatten the balls to about 3/8 inches thick. Bake at 375 for about 8-12 mins until lightly browned. Remove from cookie sheet and cool.
These divided portions hold up well in refrigerator until baked for a good while. I usually bake 8 at a time, and have 4 for a feeding, since there are two of us.
