Ingredients:
|
1 lrg eggplant, 1 lb of sausage, 1 sm can of tomato paste, 1 onion, 1/2 lb of mushrooms, 1 12 oz can of tomato sauce
1/2 lb of mozzerella cheese shredded, 1/2 lb of cheddar cheese shredded, 1 tsp of minced garlic, salt and pepper to taste

How To Prepare:

Slice the eggplant into round medallions. Place on papertowel and lightly salt. Combine chopped onion and mushrooms along with the sausage in a skillet until the sausage is brown and onions are translucent. Add garlic,salt and pepper to taste. In separate bowl, combine tomato paste and tomato sauce well. Spray either square metal pan or round glass dish with non stick spray and begin layering. Start with eggplant, then sauce, then meat mixture, then sprinkle with cheese. You should have several layers to top with cheese. Bake 350 degrees until the cheese on top is golden brown and bubbly.
