Ingredients:
|
6-1 oz. link sausages, browned and cut into small pieces
1 cup broccoli flowerettes, chopped finely
1/4 c. chopped onion
4 oz. can mushroom stems and pieces
6 eggs beaten
1/4 c. heavy cream
2 oz. shredded Jack cheese

How To Prepare:

Preheat oven to 350 degrees. Brown sausage and set aside. Drain grease from saute pan. Saute broccoli, onions, and mushrooms in same pan until slightly crunchy. Cut up sausage links into small pieces and add to veggies. Put veggy sausage mixture into 9x9 glass baking dish that has been sprayed with non-stick spray. Pour mixture of eggs, cream, and half the shredded Jack cheese over veggie mixture. Bake at 350 degrees for 35-40 minutes. Remove from oven and sprinkle remaining Jack cheese over frittata and then put back in oven for 5 additional minutes just to melt, or brown if you prefer. Slice into quarters.
I added cajun seasoning, salt and pepper to the egg mixture, but you can use any of your favorite seasonings in this.
