cauliflowerandsausage


Description:
Ingredients: 1 Cup Cooked Cauliflower
6 oz. Italian Sausage
1/2 Cup Spaghetti Sauce
Parsley, Salt & Pepper
How To Prepare: Boil Cauliflower for a few minutes until it just gets tender. Drain and use fork to seperate cauliflower until it has the consistency of rice. Do not mash.


Fry and slice the sausage until brown. Add 1/2 Cup Spaghetti sauce and simmer.


Pour sausage and sauce over cauliflower. Season to taste with fresh Parsley, Salt and Pepper.
Number of Servings: 2
Carbs per serving - include all nutritional information if known: 7 (My Sauce is 5g per 1/2 cup)
Preparation Time: 10 minutes

Pros: Yummy!
Cons:

This recipe is yummy though I have moved on... Instead of cauliflower, I now use thinly sliced zucchini... cut it lengthwise and sautee the zucchini for 4 minutes. Pour meatballs/sausage w/ sauce over zucchini and presto! It's to die for!

Cons: none

I was very surprised. Cauliflower instead of noodles? But...it was very good. If you love pasta this is a good alternative.

I wasn't sure about the texture but it was pretty good. I like the idea of using zucchini
