1 T. Butter
1 onion chopped
4 oz. can chopped green chilies, drained
8 oz. cream cheese, cubed and softened
3 1/2 cups cooked diced chicken breast (about 3)
4 oz. can sliced black olives
8 low carb green onion or regular whole wheat tortillas
12 oz. shredded Jack Cheese
2 cups heavy cream
How To Prepare:
Melt butter in a large skillet over medium heat. Add onion and saute for 5 mins. Add drained green chilies and saute 1 minute more. Stir in cream cheese and chicken. Cook till cheese melts, stirring constantly. Spoon 2-3 T filling into the center of each tortilla. Add a sprig or 2 of cilantro and 1/8th of the black olives. Roll up and place seam side down in a 9x13 inch greased baking dish. Sprinkle with Jack Cheese and drizzle cream over all. Bake in a 350F oven for 45 minutes, till golden brown and bubbly. Let stand 10 minutes to make serving easier. This is excellent! No one would suspect it is low carb. Even if you are not a fan of the low carb tortillas you will love this recipe!
