Description: A low-carbed version of the Starbucks pumpkin scone recipe.
Has the right scone texture and taste.


1.5 cups Carbalose
3/8 cup vital wheat gluten
2 TB almond flour
4 packets of truvia
1/6 cup Splenda granules
1.5 TB baking powder
1 TB polydextrose
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
6 tablespoons cold butter
1/2 cup canned pumpkin
1/4 cup dried apricots, cut into pieces
3 tablespoons heavy whipping cream
1 large egg

How To Prepare: Preheat oven to 400 degrees F. Lightly oil a baking sheet or line with parchment paper or silpat. Combine flours, sweeteners, baking powder, salt, and spices in a large bowl. Using a pastry knife, fork, or food processor, cut butter into the dry ingredients until mixture is crumbly and no chunks of butter are obvious. Set aside. In a separate bowl, whisk together pumpkin, half and half, and egg. Fold wet ingredients into dry ingredients. Add dried apricots and work through dough. Form the dough into a ball. Pat out dough onto a lightly floured surface and form it into a flattened circle. Cut into 16 triangles, and place on prepared baking sheet. Bake for 17 minutes. Scones should begin to turn light brown. Place on a wire rack to cool.
