Low Carb Sugarless Flourless Besan Peanut Butter Cookies
1 c butter , 1 c nutty peanut butter, ˝ c oligofructose+ ˝ c erythritol + ˝ tsp stevia powder (or 1 c erythritol/stevia sweetener such as Truvia), 1 c brown sugar substitute (such as Ideal Brown), 2 eggs, 1 tsp vanilla extract, 2˝ c besan (Gram flour, aka chickpea flour), 1 tsp baking powder, ˝ tsp sea salt, 1˝ tsp baking soda
How To Prepare:
Cream together sweeteners, vanilla, peanut butter, and butter, beat in eggs. Separately, blend besan, and dry ingredients. Stir all together in large bowl, and chill for at least ˝ hour. Roll into 1 in. balls, then flatten onto greased cookie sheets. Score with fork in tic tac toe design. Bake 12 min. or until starting to brown at 375. Cool completely
