I fell in love with this fully loaded baked potatoe salad at our local grocery store. I've had other potatoe dishes made with cauliflower instead, so I decided to give it a try, and it's awesome! It's my fav low carb dish. I think it turned out better than the orginal. I'm not good with measurments, so they may be a little off. Just add the mayo and sour cream to taste, my measurments may be a little off, but keep it around 1 part mayo to 2 part sour cream.

Ingredients:

1 head of cauliflower 4.5 ounce bag of bacon pieces 4-6 green onions, just the green part finely chopped 8 ounce bag of sharp cheddar cheese 1/2 cup mayo 1 cup sour cream salt pepper olive oil

How To Prepare:
|
Chop cauliflower into bite size pieces, lightly coat with olive oil, place in single layer in baking dish, sprinkle with salt and pepper, bake at 350 for 45 - 60 mins, until translucent and very soft. Do not under cook, it will throw off the flavor. Allow to cool, and mix in a large bowl with the remainder engredients. Enjoy!
