very good. My husband likes this better than a "real" baked potato. I cooked this the second time in the microwave (for about 10 minutes) and it was just as good. Will definitely be a regular here.

We loved this! I made it with a great low carb meat loaf recipe I found and it was perfect! We'll definitely be having this again. I didn't tell my 8 yr old that it was cauliflower and she didn't even know the difference, and she's picky! Thanks for the recipe!

This is soooooo good - we added cheese can bacon to the top with a dollop of sour cream! YUM, even my kids loved it!

If I would've taken extra time to squeeze out every last drop of water from the cauliflower before baking, it might have been even more successful. (You'd think that sitting in a strainer for a half an hour would have been enough)...but it was a little soggier than the usual way I've been making our "fake mashed". Still, it tasted good. :-)

This recipe is great. It was a little watery, but thats my fault for not draining it enough, I was in a rush. I mixed the sour cream cauliflower and cheddar cheese with cream cheese and bacon bits and added extra bacon bits and cheddar on top. IT WAS AWESOME!!!!

I didn't have any sour cream but just did cheese and bacon...2 of my kids liked it my last one didn't want to try it but once she did she said it was ok (she is the pickiest eater in the world)
