Description: This is a super great recipe and is one of those recipes that you will make again and again.. The flavor is amazing!


1 pound ground beef (you can substitute chopped or shredded chicken instead for variety.. it is yummy this way as well!!!)
1/2 cup onion, chopped
2 cloves garlic, minced
1 tablespoon cumin
1 teaspoon chili powder
8 ounces cream cheese, softened or diced
2 10-ounce cans Ro-tel tomatoes, undrained (tomatoes with green chilies)
2 cans beef broth (You can substitute Chicken Broth if you are making this with Chicken instead of hamburger though either is very yummy!!)
1/2 cup heavy cream
salt and pepper to taste

You can add a sprinkle of cheddar cheese on top and if you like, a teaspoon of sour cream just before serving!

Also you can make fried Lowcarb Tortilla strips for garnish on top as well.
How To Prepare: In a large soup pot, brown the ground beef with the onion and garlic; drain. Add the spices and cook a couple minutes. Add cream cheese into the meat mixture. Stir it into the meat until melted. When the cream cheese completely coats the meat, add in two cans of Rotel, two cans of beef broth and half a cup of heavy cream. Stir well and bring ingredients to a boil. .
