I was going to make stuffed chicken breasts and realized I had chicken tenders thawed out so I came up with this. If I had mushrooms in the house I would have used them. This recipe could be easily tweaked with your own favorites. It's a one pot or pan dish and so good! You could impress any dinner guest with this and a side salad.
This made a lot, but I feed 5 adults, you could easily cut the recipe in half.

Ingredients:

Brown 1/2 onion in about 4 TBS oil
with 1 clove garlic, optional
add chopped chicken about 6 breasts, cook on medium high until brown
add 1 box spinach, squeeze out water first
add a handful of chopped roasted peppers (from jar), optional
6-8 slices chopped proscuitto (ham or crumbled bacon would work)
16 oz heavy cream
1 tsp garlic powder
1 stick butter, after eating leftovers I think 1/2 stick will be fine.
2-3 oz of cream cheese
1 cup parmesan cheese shredded or a 3 cheese blend would work
Salt/pepper to taste

How To Prepare:
|
Blend thoroughly until all cheese melts and it gets bubbly. Simmer 20-30 minutes.
Serve over rice, pasta, zucchini squash, shirataki noodles, or riced cauliflower...that's what I had. DD ate it out of a bowl!
