Description: Sweet + spicy, these roll-ups are as easy as 1,2,3.. Perfect midnite snack. Depending on your carb-intake, you may want to use 1/2 a tortilla.
Ingredients: Fave low-carb tortilla (plain flavor works best)
Deli-sliced pepperoncini (12 slices = 1carb), patted dry
SMART BALANCE omega Peanut Butter (lowest carb/best tasting-- I've tried them all!!)
Sriracha hotsauce
How To Prepare: -- Spread a thin layer of peanut butter (up to two TBSP = 3 carbs; I only use one TBSP) on a low-carb tortilla and top w/ an even layer of sliced pepperoncinis, then dot a little sriracha about.
-- Roll it up, cut it into fun bite-size pieces, and enjoy one of my all-time fave snacks.
