Description:

This is a light, LOW CARB side dish. I really miss mashed potatoes and this is a NICE substitute. If you wanted to serve it as a dessert, just increase the artificial sweetener.

Ingredients:

15 oz. can pumpkin (all pumpkin NOT the pre-sweetened one)
2 large eggs separated white from yolk
pinch cream of tarter
4 pkg splenda
pumpkin pie spice
3/4 cup pecans or walnuts (I use some of both) coarsely ground.
3 T. butter

How To Prepare:

In small bowl mix the ground nuts, 1 t. pie spice and 3 T. butter until crumbly.
In one mixing bowl beat egg WHITES along with cream of tarter until stiff peaks form.
In a separate bowl mix egg yolks, pumpkin, pie spice (to taste I use about 1 t.) and two packets splenda.
FOLD (gently) the pumpkin into the egg white mixture. Gently spread the entire mixture into a greased baking pan (I use pam spray) Top with the nut mixture.
Bake at 300 degree about 20 minutes or until a knife inserted comes out clean.
