Description:

This is a soft microwave custard, with a taste and texture similar to rice pudding (but less lumpy)
|
|
Ingredients:
|
1/2 cup coconut flour
dash of salt
1/3 cup granular erythritol
1/3 cup DaVinci French vanilla syrup
1 to 2 ts. vanilla
2 large or jumbo eggs
1 cup water
1 cup heavy cream
1 Tb Thick'n'Thin NotStarch
2 ts butter, added at the end

How To Prepare:

Whisk the eggs in a glass microwave-safe bowl. Whisk in the wet ingredients, then the dry. Nuke for 2 minutes, then whisk again. Nuke another minute, then whisk. Repeat til the custard mixture has thickened to a soft, thick liquid. This took about 4 minutes in 1 minute chunks for me.
When it is a thick liquid pudding, whisk in the butter and pour the mixture into 6 small dishes or leave it in the glass bowl. Chill in fridge. It will thicken even more as it cools, and makes a soft custard with a slightly grainy texture. It tastes very like rice pudding, and would be great with a little cinnamon and/or nutmeg on top!
