Description:

muffins made with almond meal (flour)
i adapted this recipe only in the sense that i cut it in half and i used regular packets of splenda
|

Ingredients:
|
1 cup almond meal
1/2 stick of butter (4 TB) melted
1 tsp baking powder
1/8 tsp (dash) of salt
splenda-to taste (i used 3 packets)
2 eggs
3 TB water
vanilla extract (optional)
cinnamon (optional) (i used a hearty dash)
almost 1/2 cup blueberries (optional)

How To Prepare:
|
preheat oven to 350. spray/grease muffin tins.
mix dry ingredients. mix wet ingredients. combine. add berries last.
fill muffin tins about halfway full.
bake for 12-15 minutes, will be golden on top, and until a knife or fork comes out clean.
i used regular muffin tins and this recipe yield 7 small muffins.
