This should be fine for low carb. Serve with a mashed potato substitute. I am new at this. i.e.
cauliflower faux potatoes?
Makes enough for about 2 meals.

Ingredients:
|
1.5 lbs stewing beef
1 heaping tbsp bacon drippings
2 tbsp paprika
1 tsp salt (or to taste)
1/2 tsp pepper (or to taste)
1 tbsp ground caraway
3/4 tsp marjoram
1 large onion
1 can of consomme
2 or 3 heaping tbsp of sour cream

How To Prepare:

Cut beef into 1/2 " cubes and toss meat with paprika, salt, pepper, caraway and marjoram. Cut onion into big pieces. Melt the bacon drippings and fry the onion in it on med. heat until translucent. Add meat and fry until browned. Add consomme, cover and simmer for 3 or 4 hours.
1/2 hour before eating let it cool a little and add sour cream to thicken sauce and reheat uncovered. Could do it in slow cooker on low.
