Description: I love using my crockpot so I saw this recipe and just changed it up a bit for low carb. Basically its chicken and tomatoes, but so tasty!
Ingredients: 3 lbs skinless chicken thighs (or breasts will work too)
1 (14 ounce) can Italian-style diced tomatoes, undrained. (I look for the one with the lowest carbs)
1 (6 ounce) can tomato paste (same here on the carbs)
1 medium chopped white onion
1 tablespoon bottled minced garlic
1 teaspoon dried Italian seasoning
1/4 teaspoon salt
4 teaspoons pepper
How To Prepare: 1. Place chicken in 4 quart crock pot.
2. Combine tomatoes and next 6 ingredients.
3. Stir well.
4. Pour sauce over chicken.
5. Cover and cook on low for high for 1 hour then reduce heat to low and continue to cook for 4-5 hours or until chicken is tender


You can of course add veggies if you like and make a Chicken Cacciatore of sorts or additional spices, get creative!
Number of Servings: Depends on size of pieces, I got 10 servings
Carbs per serving - include all nutritional information if known: about 4 depending on how much "sauce" is eaten
Preparation Time: less than 10 minutes
Effort (Easy, Average, Difficult): Easy
