Super quick, low-carb dessert that eats like ice cream. Best served chilled.
This is a version of Chef Andre Bienvenue's Almond Ricotta Creme from the South Beach Diet.
I'm adding ground flax seed to add more fiber without carbs. I am also omitting the almonds since I'm adding the flax seed.
This is such an easy dessert and you get all that fiber without the carbs. It's a guilt-free treat. It only has 2-4 carbs per serving but it's actually quite satisfying.

Ingredients:

1/4 cup fat-free Ricotta (2 Carbs per 70g)
1-2 Tbsp ground flax feed
1/4 tsp almond extract
1 tsp Splenda or 1/2 - 1 tsp Stevia

How To Prepare:
|
In a small dessert bowl, add the ricotta. Sprinkle the flax seed over ricotta.
Add almond extract.
Sprinkle sweetener over everything else.
Before eating, if desired, mix the ingredients until they are well combined.
Carbs: 4 if using Ricotta fat free cheese (70g) and 1 tsp of Splenda.
