Description: A quick side steaming dish, high in fiber, calcium and other good things.
Ingredients: bacon grease
fresh broccoli -- 1 cup per person
salt
How To Prepare: On a day when you've fried some bacon --
Add a splash of water to the bacon grease -- just enough to cover the bottom of the pan about 1/16 inch.


Heat the pan while you chop fresh broccoli into bite size pieces -- florets and stalk slices.
When the water is boiling, add the stalk slices to the pan and cover. Cook for 2 minutes. Add the florets and cover. Steam for 4½ minutes more.


Salt to taste and serve the steaming broccoli. (No need to add butter.)
Number of Servings: make one cup per person
Carbs per serving - include all nutritional information if known: Each cup of cooked broccoli (about 5½ ounces cooked weight) has 8g Carbohydrates, 5g Dietary Fiber -- so that's 3g Net Carbs -- 1g Fat, 5g Protein, and 44 Calories.
Preparation Time: About 8 minutes.
