Description: Chocolate Cake - Black Bean & Gluten Free
Ingredients: 1 15oz. can of UNSEASONED black beans -
drained and rinsed
1 stick of butter melted-cooled
4 eggs (extra large)
1 cup Splenda (or 3/4 maple syrup)
½ cup unsweetened cocoa powder
1 Tbs Vanilla (FULL Tablespoon)
1/2 tsp baking soda
1 tsp. baking powder
1/3 cup ricotta cheese or cream cheese
How To Prepare: Preheat oven to 350 degrees.


Mix bean and butter in a food processor very well. Add in the remaining ingredients.


Pour into a greased 8x8 baking pan, bake for 30 minutes. Or make 15 cupcakes, bake for 15-17 minutes.


For a frosting I have used sugar free whipped cream.
