Description: This was a Recipe I had from my non-low carb days and I changed a few things and made it legal and very yummy.Today I used leftover grilled herbed marinated chickenbreast.
Ingredients: 1 lb slinless chicken breasts
2 tsp oil
1 cup mexican style shredded cheese
( I used Colby-Jack )
1/4 cup canned diced tomato ( fresh is better )
2 Tbsp zesty italian salad dressing
2 tsp chili powder
1 tsp ground cumin ( optional )
1 Tbsp chopped cilantro ( optional )
4 low carb ( 3gr ) tortillias
How To Prepare: Preheat grill to medium heat. Brush chicken with oil and grill 6 to 8 min. on each side or until cooked through ( 170 deg F ). Remove from grill; let stand 5 min. before cutting into strips. Place in med bowl. Add cheese, tomato, dressing and other seasoning and mix lightly. Spoon evenly down centers of tortillias. Roll up burrito-style.
Grill wraps seam-sides down for 5-7 min or untill golden brown,turning after 3-4 min.
( I brushed the rolled tortillias lightly with butter before putting them on the grill.)
