Description: Modified from high-carb recipe which used Eagle Brand sweetened condensed milk and Bisquick.
Ingredients: 1 batch Legal Brand
(find this recipe in the "Other Low Carb Stuff" section)


1 cup natural peanut butter


1 egg (mine was JUMBO)


1 teaspoon vanilla


2 1/2 cups Carbquik
How To Prepare: Preheat oven 375 degrees.


In bowl, beat Legal Brand milk, peanut butter, egg and vanilla until smooth.


Add biscuit mix and stir well. Chill at least 1 hour.


Shape into 1 inch balls. Place 2 inches apart on parchment-lined baking sheet. Flatten with fork.


Bake 10 minutes or until lightly browned.


Cool for 5 minutes on cookie sheet, before removing to cool completely on rack.
