Yummy radicchio!

Ingredients:
|
1 1/2 heads Radicchio shredded
1/2 onion chopped
1 can of chicken broth
1/2 cup of heavy cream
1/2 cup of parmesan cheese
raw mushrooms sliced
1 tbsp of splenda
salt and pepper
butter and olive oil

How To Prepare:
|
Melt butter in large frying pan add little oil. Sautee' onions. Add radicchio. Cook until almost tender. Add chicken broth and bring to a boil. Cook until tender. Add heavy cream, splenda, parmesan cheese, salt and pepper. Simmer and stir ocassionally until all ingredients are incorporated. You can eat it alone or over spaghetti squash. I used to eat it over angel hair pasta.
