Easy crock pot recipe! Tasty, low carb...great way to get some veggies and tasty stew/soup broth!

Ingredients:
|
1 to 2 lbs beef stew meat, cut into chunks
1/4 - 1/2 onion, chopped
1 14 oz. can tomatoes w/ roasted garlic
2 C. water
Chopped fresh mushrooms (as many as you like)
Frozen green beans (as much as you like)
1 tbsp dried rosemary
Salt and Pepper to taste
Pam cooking spray

How To Prepare:
|
Heat skillet over medium-high heat. When hot, spray skillet with Pam and add beef. Cook just to give meat a little color on each side (don't cook through!).
Meanwhile, turn crock pot on LOW. Chop onion and mushrooms. Dump into crock pot with green beans, tomatoes, water and seasonings. When beef is seared, add to crock pot.
Cook for roughly six hours until meat is cooked through and onions are tender.
To serve, Portion out as much meat and veggies as desired for various carb plans. Top with grated cheddar cheese if desired. The broth is EXCELLENT.
Recipe makes about 3 entree portions.
