You are going to want this AT LEAST once every
2-3 weeks!
No one will know it was zucchini
|

Ingredients:
|
1 LB Ground Beef
Try using 1/2 and 1/2 of any two: ground beef, ground turkey, italian sausage made from beef or turkey
1/2 cup chopped onion (I use frozen)
1/2 cup chopped bell pepper (I use frozen)
1 tsp dried Oregano
1 tsp dried Basil
1 tsp Garlic Powder (I was out of fresh garlic)
2 - 8 oz. cans Tomato Sauce (I use Contadina ... less sugar)
2 LG Baby Zucchini (each about 4" long. If using reg. Zuchhini, 1 - 8" should do it)
8 oz Shredded Cheese (I use the 4-cheese Mexican blend but you can use Mozzerella, Cheddar, or a mix of the two if you prefer)
20 Pepperoni slices (Turkey pepperoni is best ... less fat)
Salt and Pepper to taste

How To Prepare:

Preheat oven 350 degrees.
In a Medium sized pot (w/ a lid), brown ground beef with onions, b. peppers, oregano, basil, garlic, salt and pepper. Turn heat down and let simmer at least 10 minutes with lid on. Drain off grease. Taste to see if you need more salt and add if needed.
Add tomato sauce. Replace lid and let simmer while you cut up your zucchini. Peel Zucchini. Slice Zuchhini in lengthwise strips approx 1/8" thick.
In a 2-qt casserole dish (Hey ... I like my casserole dish so I didn't try it in a pan) put in just enough of your meat sauce to cover the bottom. Lay slices of Zucchini to cover the sauce. Put 10 pepperoni on top. Add 1/3 of the cheese. Add 1/2 your meat sauce. Another layer of zucchini, then pepperoni, then cheese. Add last of the meat sauce. Cover with last of the cheese.
Place casserole on middle oven rack.
Bake at 350 degrees for approx. 45 minutes. Take out casserole and use papertowels or a slice of bread to remove any grease that has come to the top. Put back in oven and cook for 15 minutes more.
Remove and let cool 10-15 minutes before serving.
Serves 6-8 depending on your portion size. 6 if by itself, 8 if having a salad or green beans, etc. with it.
