Description: Ham-Basil Quiche
Ingredients: 1 cup chopped cooked ham (I used 96% Fat Free)
1 cup shredded Monterey Jack cheese
2 tsp dried basil
1 TBL prepared mustard
3 eggs
3/4 cup whipping cream
How To Prepare: Preheat oven to 350 degrees


Spray a 9 inch pie pan with pam.


Combine ham, Monterey Jack and dried basil in a medium bowl; mix well. Spoon into greased pie pan.


Whisk mustard, eggs, and cream in a medium bowl until well blended. Pour egg mixture over ham mixture.


Bake quiche until filling is set and edges are lightly browned; about 30 minutes. (Cooking times vary.)

Carbs per serving - include all nutritional information if known: 223 Cals -- 20 g fat (75%) -- 3g carb (5%) -- 1g fiber -- 12g pro (20%)

Positive aspects of the product (pros): It's easy to make and totally atkins friendly.
Cons: A bit salty

I freeze mine and eat it throughout the week. That is a plus in my book.

Positive aspects of the product (pros): Quick and Easy
Cons: Felt like it needed some type of crust

Overall great use of left over ham. However my hubby and I decided next time we will line the pie pan with sliced Swiss cheese to create a crust on the bottom. Also plan to add some different spices to kick it up a bit. Great quick recipe.
