Description: This is very good, does not taste low carb with then tasty crispy coating.
Ingredients: 1 Eggplant
1 Egg
Parmesan Cheese
Vegtable Oil
How To Prepare: Slice Your eggplant
Cut away the outer peeling
Rinse eggplant under water


Beat one egg into a bowl
Pour out an desirable amount of parmesan cheese on a saucer


Heat oil in non stick skillet


Dip your eggplant slice into the beaten egg, coating both sides


Then dip the slice into the parmesan cheese, coating both sides.


Drop your eggplant slice into the hot oil and fry on each side a few mins till golden brown.
Number of Servings: Depends on you
Carbs per serving - include all nutritional information if known: very low
Preparation Time: 15 mins
