Made this one weekend when playing around, and fell in love. Makes enough for 2 for a week of lunches. Very satisfying.

Ingredients:
|
3 med zucchini, diced
3 med yellow squash, diced
1 med onion, diced
1 yellow bell pepper, diced
3 cloves minced garlic
5 stalks celery, diced
1 pkg crimini mushrooms, sliced
2 pkgs chicken tenders, cut into bite sized pieces
Italian seasoning to taste (about 2 tbsp)
Salt and pepper to taste (I am quite liberal here)
3 qts. low sodium chicken broth
1 small carton heavy cream
olive oil/butter

How To Prepare:

Melt butter into olive oil, and saute onion, zucchini, squash, garlic, pepper, celery, and mushrooms with salt, pepper, Itialian seasoning until tender. Add broth, bring to a boil, add chicken and simmer for 35 - 45 min until chicken is cooked through and tender. Stir in heavy cream (also works well with half and half, or nothing at all) and heat gently.
I also will toss a handful of fresh trimmed green beans in here, and sometimes frozen corn, if cooking for fiance (non low carb).
