Description: Sweet and yummy
Ingredients: 1 medium sweet potato
2 cans of pumpkin
1 1/2 cups of Splenda
1 cup of butter melted
2/3 cup of a can of Atkin's Vanilla shake
3 eggs beaten
dash of nutmeg
dash of cinnamon


Topping:
2 cups of brown sugar twin
2/3 cup of butter
1 cup of chopped walnuts
How To Prepare: Peel and boil the sweet potato until tender. Drain and mash in very large bowl. Add ingredients and mix well. Pour into a Pam sprayed large casserole dish. Pour in and smooth top. In a seperate bowl mix topping. With a large spoon swirl the toppings over the casserole. Bake at 350 for 1 hour or until set.
Number of Servings: huge batch--maybe 16
Carbs per serving - include all nutritional information if known: about 4
Preparation Time: 20 min. to mix up, 1 hour or so to cook
