Description: Caffeinated cookies!
Based on CandidCam's basic cookie recipe, inspired by the music of Goran Bregovic.
Ingredients: 2 cups Carbquik
1 cup almond flour
1 cup polydextrose
1/2 cup erythritol
1 teaspoon baking soda
3 scoops Designer Whey protein powder
1/4 cup instant coffee
3 tablespoons cocoa powder
1/4 cup espresso beans, crushed
2 eggs
1 teaspoon vanilla
8 drops Sweetzfree (or 1/3 cup Splenda)
1 packet Sweet One (or Stevia or whatever you like)
2 sticks butter, softened
1 tablespoon glycerine
1 bag MiniCarb chocolate chips
How To Prepare: Preheat oven to 325 degrees F.
Crush coffee beans with a mortar and pestle. Leave them kind of chunky; not whole beans, not fine powder, but somewhere in between.
Mix dry ingredients in a big bowl.
Cream butter. Add eggs, vanilla, glycerine and sweeteners. When mixed, add dry ingredients. Once dough is together, add in chips.
Form balls (I used a #100 disher from a restaurant supply store, but a half-teaspoon measuring spoon would work well too) and arrange on cookie sheet. A silicone mat is nice if you have one.
Flatten balls if you prefer flat waferlike cookies, or just bake them as is if you like puffy bites.
Bake 7-8 minutes for the puffy kind, 5-6 minutes for the flat kind. Let cool thoroughly; the coffee beans get soft while the cookies are hot but regain their crunch when the cookies cool.
Serve with coffee!


Other ideas: add some cinnamon for a cappuccino flavor, make a sandwich with coffee ice cream, crumble into an espresso cup with whipped cream and dust with cinnamon...eat enough of these and inspiration will strike you, I guarantee it!


Note: as written, these cookies aren't overly sweet. They are slightly sweet, and perfect with coffee, but if you want to just eat them like normal cookies, you may want to add a few more drops/spoons of sweetener.
