Description:
Ingredients: 1 cup all purpose flour(almond)
1 cup splenda
1 t. ground cinnamon
1 t. baking powder
1/2 t. salt
1/2 t. ground cloves
3 eggs
1 can pure pumpkin
1/4 cup oil
2 T. water


8oz. cream cheese
1 t. vanilla extract
1 cup splenda/to taste
1/4 t. grated lemon peel
How To Prepare: In a mixing bowl, combine the first 6 ingredients. Add the eggs, pumpkin, oil and water;mix well.
Spray with pam an 11x7x2 baking pan. Bake in pan at 350 degrees for 20-30 mins or until toothpick inserted near the center comes out clean. Cool.


FROSTING:
In a mixing bowl, beat cream cheese, add splenda, vanilla and lemon peel. Frost and chill for 15 mins, then cut. Refrigerate left overs.


Note* I use the frosting as a spread and used it as I cut a slice of bread.

Pros: great taste!
Cons: I needed to add a little extra splenda to the frosting to make it sweet enough, but that's nothing major.

I made the recipe for my daughter, who's a pumpkin addict. It tastes almost like a spice bread type thing, and we all enjoyed it. I am making it again since I'm craving something sweet.
