Break up hamburger and put into a large bowl and set aside.
Into your food processor put, 8 ounces of summer sausage, onion, cut up pepper, and garlic. Process until everything is chopped and not pureed!(Use the pulse action) Add to the hamburger in the bowl and mix in the 2 eggs, salt, pepper, and parmesian cheese. Form into a meat loaf shape and put into a 9 X 13 inch baking dish that has been sprayed with Crisco Olive oil non stick spray.
Cover with foil and bake in a 350 degree oven for 1 hour or until done and no longer pink, remove the foil the last 15 minutes of baking to allow it to brown some. When you take it out of the oven let it sit in the pan for at least 10 minutes before slicing! Serve with huge salad! YUMMO!
