I made this recipe up because I wanted to find something new that would add a little variety to my lc menu. DH practically licked the plate clean, and he doesn't even LC!

Ingredients:
|
6 sausage links (hot or sweet)
2 peppers
1 onion
1 tomato
1 8 oz can of tomato sauce (plain or preseasoned)
1 cup shredded mozzarella cheese
1 tbsp oil
1/4 cup butter

How To Prepare:
|
1. Cut sausage links into bite sized pieces. (I used sweet sausage because I can't handle spicy food.) Heat oil in pan for sausage. Once cut up, put sausage in pan and fry. Meanwhile, cut up peppers and onions into medium sized slivers. (stir-fry style.)
2. In separate frying pan, melt butter, then add peppers and onions and saute on medium heat until almost done. When almost done to your liking, turn down heat and allow to simmer.
3. Put can of tomato sauce in small saucepan. If using plain, season to your liking. I add lots of garlic powder, about 1 tsp chopped dried onion, a hefty dose of oregano, a dash of onion powder, a dash of basil, and a dash of bay leaves, as well as a dash of Splenda. (To take away the bitterness.) I prefer using the plain tomato sauce because it has less carbs/sugar than prepared.
4. Heat sauce after spicing. Continue cooking pepper/onion mixture and frying sausage.
5. Cut up tomato into bite sized chunks and set aside.
6. Allow sauce to heat to boiling, letting the spices settle in.
7. Once sauce is boiling, take it off the heat, and dump it all in the pan with the peppers and onions. Allow to cook for a minute.
8. Take the fried sausage chunks (I allow them to burn a bit to add flavor and crunchiness) and add them in the pan with the pepper/onion/sauce mixture. Mix together well.
9. Allow this mixture to simmer on medium-low heat for 5 minutes to allow the flavors to blend together.
10. After 5 minutes, add tomato chunks in an mix well.
11. Simmer another 5 minutes, then sprinkle the cup of cheese on top of the entire mixture. Put heat on very low, cover, and allow cheese to melt. Enjoy!

50 for entire recipe - 25 per serving if 2 servings, 12.5 per serving if 4 servings (you can cut this down by 8 for total recipe if you only use 1 green pepper) Also, I did not subtract any fiber from the carb count
