LC milk (I use soy slender chocolate...) -- 32oz to fit in one ice cream mixer bowl
LC thickner (I use expert foods NOT STARCH but I think xanthan gum will work good too except that it will get a little gummier)
Sweetner (I use sucralose but any will do)
and flavorings if you want...
How To Prepare:
Combine about 1/4 of the milk with about 3tbs of NOT STARCH thickner (or a lot less xanthan gum) and the sweetner (to taste -- keep in mind that after you make the ice cream, it gets less sweet because of the thickners) and flavoring. Use hand mixer or whisk to blend till it thickens. Then add 1/2 the rest of the milk and mix again till thick. Finally add the rest of the milk, mix a little more and put in fridge overnight -- this will let the thickners to really integrate with the fluid. Take it out of the fridge -- it should be as thick or thicker than pudding. Pour into ice cream mixer according to manufacturers directions. Serve right away or freeze -- but you have to let it thaw if you freeze it!
keep in mind -- mine didnt turn out the way i liked it till a few tries with different amounts of thickner... but now that i've got it exactly the way i want it -- its AWESOME!!
