Brendajm posted this recipe on the Carbquik thead and I made it this morning for breakfast. I admit to making some tweaks to the basic recipe and was very pleased with the result. Delicious!

Ingredients:
|
3/4 cup Carbquik
1/4 cup heavy cream
1/4 cup water
3 eggs
1/3 cup Splenda or liquid equivalent
1 teaspoon baking powder
2 large tart cooking apples, peeled and sliced
1 teaspoon cinnamon
1/4 cup butter
1/4 cup pecans or walnuts, chopped

How To Prepare:

Pre-heat oven to 450 degrees.
Combine Carbquik, cream, water, eggs, Splenda and baking powder. Mix well.
In 9 to 10-inch ovenproof skillet, sauté apples and cinnamon in butter over medium heat until tender. Remove from heat; sprinkle with nuts.
Pour batter evenly over apples and nuts.
Cover skillet with lid or foil. Bake for 10 minutes until pancake is puffed. Remove cover and bake 5 more minutes or until golden brown.
Loosen sides of pancake from skillet. Cool slightly. Cut into wedges and serve warm with sugar-free maple syrup.
