Description:
Ingredients: 1 whole egg
1 cup Carbquik
2 tablespoons Splenda
1 teaspoon grated lemon peel
1/4 cup lemon juice
1/8 cup water
1 tablespoon oil
1 tablespoon poppy seeds (optional)
1 teaspoon baking powder
1 pinch salt
How To Prepare: Heat oven to 400ºF. Place paper baking cup in each of 6 regular-size muffin cups, or grease bottoms only of muffin cups.
-Beat egg slightly in medium bow, stir in remaining ingredients just until moistened. Divide batter evenly among cups.
-Bake 15 to 20 minutes or until tops are golden brown.
Number of Servings: 6
Carbs per serving - include all nutritional information if known: 5 Grams
Preparation Time: 15-20 Minutes

Pros: Easy
Cons: not sweet enough

Still working these out, 2T of Splenda is not enough, I tried 3T, and still not sweet enough for my taste. Maybe because I used fresh lemon peel not the kind you buy????

Pros: They look like muffins
Cons: Yuck! They don't taste like muffins

These had a yucky aftertaste. I couldn't eat any of them. They weren't sweet enough either. And I usually like carbquick, especially their drop biscuits. But I didn't like these.

Pros: texture
Cons: not sweet enough

This was my first Carbquik recipe. Pulled it right off the box. I will try others since the reviews are so good, however this recipe did not suit my palette. Not sweet enough for sure. I would probably have liked more tart taste too. So, if you plan on giving this recipe a shot, probably double the splenda and lemon juice. I will not try this recipe again. Sad
