Description: This recipe was posted by Kelly on a different website. I love love love this recipe. It reheats really well and it fills you up! I usually use jalepeno sausage or some other type of spicy sausage


Perserving is 330cal; 8carbs - 3fiber =5net carbs
Ingredients: 1 pound Italian sausage
8oz tomato sauce
2 medium packages frozen chopped spinach, thawed and drained
2 cups cottage cheese
0.5 cup grated Parmesan cheese
1 egg, beaten
2 cups shredded mozzarella cheese




How To Prepare: Brown sausage in skillet over medium high heat. Drain fat from skillet and stir in tomato sauce. Set mixture aside.


Preheat oven to 350 degrees F (175 degrees C).


In a large bowl, combine the spinach, cottage cheese, Parmesan cheese and egg. Mix well and spread mixture in the bottom of a 9x13 inch baking dish. Spoon sausage mixture over spinach mixture and top with mozzarella cheese.


Bake in preheated oven for 40 minutes.

Pros: easy and tasty
Cons: none yet - unless it doesn't freeze well

I tried this one and it was great! I did add some garlic powder, salt and pepper to the spinach and cheese mixture. Also I switched out to ricotta cheese (whole milk) since it has a lower carb count than cottage cheese. I will be making this one again! I have frozen some of it so I will add on if it freezes well.
