Description:

Since Yellow squash is SOOOO abundant at this time of year, I have devised a low carb dish using it. Yellow squash is naturally low carb and zucchini squash is even lower.You could probably use zucchini in this recipe also.

Ingredients:
|
3 medium yellow squash (fresh)
1 medium egg
8 oz cream cheese
1/2 small onion (diced fine)
Old Bay seasoning
1/2 cup Mini-Carb baking mix (0 carbs)
salt & pepper (to taste)
1/3 cup Olive Oil (for frying)

How To Prepare:

Using a hand grater OR a food processor, grate the fresh squash to a shredded or finely diced consistency. In a large bowl, combine grated squash, egg, cream cheese, baking mix, onion, and Old Bay seasoning. Mix all ingredients together, the mixture should be quite thick. If it is too thick add a little mayonaise to loosen it up.Salt & pepper to taste
Heat olive oil in skillet. Drop the squash mixture into hot olive oil by large spoonfuls. Let them cook without moving them for about 2 minutes. Flip over and cook about 2 minutes.Be SURE to adjust your heat as needed! Usualy about 7 or medium high is sufficient.
You could cook them crispy or soft! it just depends on the heat.
