Description:

These have a delicious flavor and nice chewy texture, close to the "real thing"! Great for occasional (maintenance level) treat. Also makes a yummy ice cream sandwich with some LC Vanilla ice cream in between two cookies. mmm mmm

Ingredients:
|
Chewy Chocolate Chip Pecan Cookies
1 cup Splenda
2 T Vanilla Davinci SF Syrup
1/2 cup Steel's Praline sauce
1 stick butter, softened
1 large egg, beaten
1 tsp. vanilla extract
1 T Thicken/Thin or xanthan gum
1/2 cup plain whey protein powder (I used Whey-Lo Natural, 1 carb per scoop)
1/2 cup almond flour (Bob's Red Mill)
1/4 cup vital wheat gluten (Bob's Red Mill)
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
3 chopped Hershey's 1 Carb Choc Bars, or other LC Choc Bar
1 cup chopped pecans

How To Prepare:
|
Whip first 6 ingredients together. Mix up the dry ingredients and stir in well. Fold in the chopped chocolate and nuts.
Let sit a few minutes to thicken up slightly. Drop rounded spoonfuls onto parchment paper lined cookie sheets.
Bake @ 375 for 8-10 mins till lightly browned. Yummy!
