I was craving a coconut creme egg, so I threw the following together to satisfy my craving. You may adjust the sweetness to your taste. I didn't make them overly sweet.
8 oz. cream cheese
1/2 teaspoon coconut DaVinci
1 teaspoon vanilla DaVinci
1/2 cup unsweetened coconut
1/4 cup Splenda (bulk)
How To Prepare:
Mix with electric mixer. Form into 8 small (1 1/2 inch long approx.) eggs.
I melted 2 sugar free Hershey\'s mini bars and drizzled over the top of a few eggs and fully coated
the top of the rest of the eggs. You could melt more and totally cover them for an all around
festive look. Keep in the refrigerator.
Without the chocolate, the counts are: (filling only) 978 Calories; 98g Fat (85.5% calories from
fat); 20g Protein; 17g Carbohydrate; 3g Dietary Fiber; 249mg Cholesterol; 670mg Sodium.
