Description:
Ingredients: 2 pounds pork loin --
bonelee
3 tablespoons dijon
mustard
2 teaspoons soy sauce
1 large clove garlic --
minced
1/2 onion -- chopped
1/2 teaspoon rosemary
1 tablespoon olive oil
How To Prepare: Place pork on rack in
shallow pan. Combine
remaining ingrediants,
spread evenly over roast.
Roast uncovered at 350F
for about 1 hr 45 mins. Coat
with any extra mixture
during cooking.

Pros: Easy to make; tasty
Cons:

This was quick to prepare and very easy to make. Very tasty, too. (I had a 3.5 pound roast, so I used a cooking bag, baked it the same amount of time, and it turned out very moist.)

Pros: very tasty
Cons: messy roasting pan

The glaze that dripped off the meat burned and stuck to the pan! I think using a roasting bag is a good idea and I will use one next time. However, the meat was very good and tender. I only cooked it for 1 hour and 15 min. and that was plenty. I will make this again. Nice flavor and beautiful glaze.
