Description:
Ingredients: 2 small cans tuna -- drained and flaked
3 eggs
1/4 teaspoon salt
1/4 teaspoon red pepper
1 tablespoon dehydrated onion flakes
1 bag pork rinds (3 oz.) -- crushed
1/2 cup grated cheddar cheese -- parmesan would probably be good
How To Prepare: Mix all together and form small flat patties about the size of a small cookie. Heat about 1/2 inch of oil in skillet and add patties to hot oil. Be careful! It popped a lot. Brown on both sides and put on paper towels to blot up excess oil. Eat with
homemade low carb ketchup if you like. Very low carb and it they were delicious. You could also use canned salmon.

Pros: is very flexible to suit personal tastes
Cons: the oil bubbles and splatters all over

I'd serve it to guests and that's how I judge a recipe. It was great with tabasco added on top. I also put some vinagrette dressing in the tuna mix...though it's great without. This is a fun recipe.

Pros: A new way to eat tuna
Cons: watch the oil splatter! those pork rinds really pop!

Great recipe and simple to make. I ate mine with a slice of tomato and it was delicious. Now I don't have to eat tuna the same old way!
