Description:
Ingredients: 2/3 cup Atkins Bake Mix
4 ounces cream cheese
6 packets artificial
sweetener -- (6 to 8)
2 eggs
1 tablespoon coconut
extract -- or almond,
banana, cinnamon,
whatever
How To Prepare: Soften cream cheese in
microwave for about one
minute. Add remaining
ingredients, mix well by
hand. Spoon into muffin tin
sprayed with Pam. Bake at
350 for 20 minutes.
You can also use this batter
as pancake mix, adding
blueberries and using
vanilla extract.
NOTES : No carb count

adjust accordingly

Pros: finally an edible muffin
Cons: baking too long for my oven

Mine came out a little dry. Should have removed them at 15 minutes. I added walnuts,(probably a no-no)but they still tasted good.

I just wanted to let you know that I tried the Atkins Corn Muffin Mix and the Atkins Banana Nut Muffin Mix. The corn muffins were OK, especially if you put some butter on them, but the Banana Nut Muffins were yummy just by themselves!
