Ingredients:

Butter for greasing the
cookie sheet
1/2 cup atkins bake mix
1/4 cup unsweetened
coconut meat -- shredded
1/4 cup hazelnuts --
coarsely chopped
2 egg whites
2 tablespoons seltzer water
-- or soda water
8 tablespoons butter -- 1
stick - softened
2 packets artificial
sweetener -- do not use
aspartame

How To Prepare:

Preheat oven to 350
degrees. Generously butter
cookie sheet.
Combine bake mix,
coconut, hazelnuts, egg
whites, seltzer, butter, and
sugar substitute in a bowl
and mix well.
Drop the batter by rounded
tablespoons onto the
prepared cookie sheet (you
will have about 20).
Bake for 20 minutes, or until
lightly golden. Remove from
oven and cool slightly.
Serve immediately or store
in an airtight container for
up to 1 week. Makes about
20 cookies.
