Description:
Ingredients: 1 package sugar free lime
jello -- small
16 ounces cream cheese --
softened
1/2 cup heavy cream
1/2 teaspoon coconut
extract
How To Prepare: Whip the cream until stiff. In
a large bowl, soften the jello
in 1/3 cup boiling
water;when it
is all dissolved, add 1/3 cup
cold water. Then start
adding the cream cheese,
one piece at a
time ( cut the two 8 oz. pkgs
into four pieces each), and
blend on the lowest mixer
spped. When
it is all in, add the extract
and mix on high until
smooth. Then add the
whipped cream, mix
again until smooth, and
pour into a pie plate to set.
Makes 8 servings


Variations: Use cherry jello
with almond extract. Or
strawberry with no extract,
use your
imagine...


(the mixing is very messy till
you get most of the cream
cheese in, the jello
spatters, I put a
paper towel over the bowl.
ENJOY!

extract not included in
above total - adjust
accordingly

Pros: Easy, simple ingredients, tasty, very low in carbs!
Cons: None

I have made this recipe SEVERAL times, the first time being during induction when I was craving something sweet. I originally made it w/ the lime jello, then cherry one time, and now I am going to try it w/ lemon. I like the citrus fruits better than the cherry, strawberry etc...


However, it may not be sweet enough for some people. I like it the way it is, but some may want to add some sweetner. Enjoy!

Wow...I have made this half a dozen times in the last month...very quick and easy. Guaranteed not to fail...Delicious for low carbers too. Light and great for hot summer days!
